The structural study and optical different matrices , alkali halides to know the effects of doping on their properties.
The structural analysis of the samples prepared was carried out by the X-ray diffraction and IR spectroscopy and micro -Raman .
XRD revealed the incorporation of Nb crystallite in the crystal matrix , and produces another Nano phase ( Nb2O5 ) .
The μ -Raman and FT-IR spectroscopy to confirm the results of the characterization by X-ray diffraction as regards the presence of the phase Nb2O5 and existed the Nb- O chemical bond in the crystal matrices KBr and KCl .
The optical absorption study for the nanocomposites prepared Nb / Nb and KBr / KCl show a transparent matrices in the Visible and Ultraviolet related field , When these matrices are doped with Nb2O5 nanocrystallites their optical gap decrease.
The optical characterization radioluminescence for samples prepared shown that this low-intensity luminescence in the visible range when excited by radiation X.

This work aims to locate at the structural and molecular scale the rheological and technological responses of gluten-free bread doughs compared to those control of soft wheat in order to know the molecular interactions involved and to know how to exploit them. The rheological properties of the doughs as well as the technological properties of their breads were estimated. The response surfaces methodology was used for the optimization of the methodology of chemical dissociation of molecular interactions. The validation of the latter was carried out by a classification test of bread doughs of différent qualities followed by a statistical test of correlation between the dissociation rates of doughs and their rheological and technological quality parameters. The effect of molecular interactions on the rheological behavior of doughs was approached by the inhibition of S-S bridges formation by NEMI and the dissociation of hydrophobic interactions by SDS. This same principle was followed for the study of the impact of molecular interactions on the establishment of gluten-free bread dough. The structural mechanism of gluten-free bread doughs development was studied by FT-IR and FT-Raman spectroscopie methods. Gluten-free doughs show higher elastic behavior than that of soft wheat, thus inducing their low viscoelasticity. The optimum SDS and P-mercaptoethanol concentration ranges allowing a maximum dissociating effect are respectively [0-3.5]% and [0-0.007] M for 60 min of contact at rest between dough and dissociating solution. The highest dissociation rates are noted respectively for Maize- Field bean, Rice- Field Bean, Soft wheat dough type 1 and then type 2. The low viscoelasticity of gluten-free doughs is the resuit of their poor ability to develop S-S bridges and hydrophobic interactions. Hydrophobic interactions participate in the formation of gluten-free matrices more than S-S bridges. The mechanism for the formation of gluten-free protein network was based on the formation of P-sheet and a-helix structures to the détriment of P-turns. This is favored by the strong absorption of water during the long kneading time. Gluten-free proteins are characterized by a strong tendency to form S-S bridges of unstable conformations. The latter condition the distribution of secondary structures involved in the maintenance of gluten-free protein networks and consequently the solid character and the low viscoelasticity of their doughs. The strong ability of starches in gluten-free ingrédients to group in a crystalline form conditions the strong structuring and strong folding of their protein networks.

The effects of doping on the structural and optical properties of the host matrices have been studied.
The structural studies of samples were performed by XRD, μ-Raman, IR spectroscopy, scanning electron microscopy (SEM) and energy dispersive X-ray analysis (EDX).The treatment of XRD spectrum confirms the existence of crystallites of dopants (Sb2O3 and Y2O3) in the nanometer regime;Studies by μ-Raman and IR confirmed the
presence of chemical bonds Dy—Oand Cu—O in the different matrices.
The morphological study using the scanning electron microscope (SEM) shows that the micron grains scattered on the surface. The microscopic size of these aggregates is due to the fact that the nanocrystals have a tendency to reduce its free energy (Gibbs energy) of surface. The energy dispersive X-ray analysis (EDX) spectrum indicates that
the NaCl:CuO single crystal has a very high purity.
The optical absorption and photoluminescence shows that the optical gaps of the crystallites (CuO and Dy2O3) have been shifted to the high energy due to the quantum confinement effect of the charges.
The samples have important intense luminescence properties in the ultraviolet range. This feature makes these materials candidates which might come in the manufacture of components for optical systems using shorter wavelengths.

In this work antimony oxide (Sb2O3) and yttrium oxide (Y2O3) nanocrystals doped KBr, KCl and NaCl single crystals have been grown by Czochralski (Cz) method.
The effects of doping on the structural and optical properties of the host matrices have
been studied.
The structural studies of samples were performed by XRD, μ-Raman, IR spectroscopy, scanning electron microscopy (SEM) and energy dispersive X-ray analysis (EDX). The treatment of XRD spectrum confirms the existence of crystallites of dopants (Sb2O3 and Y2O3) in the nanometer regime; on the other hand, the existence of the stable monoclinic phase crystallites (Y2O3) under atmospheric conditions reconfirms presence of (Y2O3) in nanoscale.
Studies by μ-Raman and IR confirmed the presence of chemical bonds Y—O and Sb—O in the different matrices.

• le (E)-2-(2,4-dichlorobenzylideneamino) benzenesulfonamide IV-Sulf,
• le (E)-2-(2- hydroxybenzylideneamino)benzenesulfonamide V-Sulf. et
• le (E)-2-(((3,5-dichloropyridine-2-yl-)imino)methyl)phenol VI-APy
The structural modification on the different positions of the base molecule, allows to improve its biological profile conferring antibacterial properties. In fact, Schiff bases derived from Sulfanilamide have shown exceptional potency, based on the minimum concentrations of MIC inhibition, which for the majority is very low. On the other hand, the antioxidant activity of our Schiff bases was evaluated by different methods (DPPH•, ABTS+•, the chelation effect, CUPRAC, reducing power, FRC) which allowed us to confirm the antioxidant capacity of the two Schiff bases which have a hydroxyl group. Indeed, the EC50 values for the VI-Apy base were consistently lower than those of V-Sulf and sometimes even lower than the reference antioxidants. This suggests that VI-Apy appears as a more powerful antioxidant agent. On the other hand, a cytotoxicity test is carried out on the larvae of Artemia salina and which has shown that only the derivatives of anthranilonitrile (I-Anth and II-Anth) and o-aminopyridine (VI-Apy) exhibited potent cytotoxicity (LC50 between 44.19 and 69.73 µg/mL),
whereas sulfanilamide derivatives (III-Sulf, IV-Sulf and V-Sulf) were non-toxic (LC50> 1000 µg/mL).
As a result, they have a positive outlook because they can be used in pharmaceutical applications such
as antibacterial agents.

• (E)-2-(2,6- dichlorobenzylideneamino)benzonitrile, I-Antha and I-Anthb,
• (E)-2-(4- nitrobenzylidene amino)benzonitrile II-Anth,
• le (E)-2-(4-nitrobenzylideneamino)benzenesulfonamide III-Sulf,
