In order to know poor households, manage to eat, their food ritual and if their diet is nutritionally adequate, we conducted a survey followed by three 24-hour dietary recalls for a year with beneficiaries of the oldest association of charity in Constantine. The study showed that their diet is simple, user-friendly and monotonous, it is based on cereals, potatoes, seasonal vegetables and pulses. In times of crisis, the housewives prepare meals with milk and pasta. Their diet is based on plant sources and very poor in animal sources, it is insufficient in energy, lipids, iron, calcium, vitamins A and D. But it’s excessive in carbohydrates and sugar. In the light of these results, we recommend directing a portion of the monetary aid towards free vouchers for the purchase of fresh foods that are beyond their means, and give to housewives food education courses to diversify their food resources and balance them.

They were described as a population which is characterized by a high frequency of behavior said at risk. Few studies on this subject have been carried out in Algeria, and more specifically on the student population. The aim of this thesis is to describe the relationship between physical activity and the diet of Algerian students with their corpulence. An epidemiological survey was conducted at the University of Brothers Mentouri Constantine 1 in 2015 on a representative sample of 1061 students (63.9 % female), aged 23.3 ± 2.5 years. The data was collected using a survey form (general characteristics, physical activity questionnaire, physical activity journal, usual frequency of food consumption and 24-hours food recall). Anthropometric measurements and body composition were realised: weight, waist, waist circumference (WC), hip circumference (HC), brachial circumference, skin folds (adipomètre), fat mass and fat-free mass (impedancemetry). Systolic and diastolic arterial pressures were also measured. Epi-Info version 3.5.3 and STATA Version 11.0 software were used for data processing. The materiality threshold used was 0.05. Our results showed that the average body mass index (BMI) of the students was 22.4 ± 3.0 kg/m2 (86.9 % were overweight and 13.1 % obese). The sports students represented 26.4 %. Students who walked less than 30 minutes were 4 times more likely to be overweight with a significant difference of 95 % and those being seated longer than 4 hours was 2 times more. Sleep accounted for 36.5 % of the time of a typical day followed by non-sedentary activities (10.9 %). A significant and negative correlation was found between mean physical activity level (PAL=1.51 ± 0.1) and BMI, body fat percentage and WC. Students spent on average 2200.9 ± 404.4 kcal/day with a difference in favor of women (p=0.0030). The average total energy intake of the students was 1993.1 ± 599.6 kcal/day (732.9 kcal/day - 4318.4 kcal/day) with 26.1 % for fat, 13.9 % for protein and 60.0% for carbohydrates. The frequency of consumption of fatty and sugary products was predominant in obese subjects (p<0.05). Significant correlations were found between PAL and the frequency of consumption of fatty and sugary products; energy and nutritional intake; BMI, %FAT and WC. The more the contributions in energy and nutritional increased, the more the corpulence of the students increased. It appears from this study that there is a relationship between physical activity, diet, and algerian student body built. It is desirable to encourage this population to practise walking during their free time, the use of university sports facilities, consume more fruits and vegetables and have a better sleep. Sedentary solicitation must be minimized in daily activities. Information, prevention and promotion actions on the benefits of physical activity and healthy diet must be put in place at national level.

The phenotypic and molecular evolution of these bacteria has not stopped, allowing to the latter to adapt to each step of pathogenesis, including:
environmental conditions, host response and control methods. Emergence of antibiotic-multi resistant salmonella strains, which is often the cause of treatment failure that significantly exacerbated the situation.With regard to this development, an arsenal of biological techniques have been developed to study the phenotypic and molecular diversity of this bacterium in order of support and monitor to better adapt the means of prevention and control.
The undertaken work as part, first the objective of assessing the phenotypic variability of 37Salmonella isolated from food (serotype diversity, biochemical characterization and sensitivity to antibiotics) and visualize the molecular (genetic) variability using various techniques: ADN16S sequencing, MLST (Multi-Locus SequenceTyping), MLVA(Multiple- Locus VNTR Analysis) by identifying and exploring the genetic materials whose expression is essential for metabolism and necessary for the adaptation of Salmonella to their
environment.
A second approach was also conducted. It consisted of a comparative study of 39 humanorigin Salmonella responsible for gastroenteritis during the same period. Results obtained with food borne isolates revealed a serotype diversity with predominance of Salmonella Enteritidis accompanied by biochemical variability in antibiotic susceptibility resistance to nalidixic acid, ofloxacin and non-wild phenotypes to the ciprofloxacin, trimethoprim/sulfamithoxazol and betalactamines observed with some serovars that reflect the
development of resistance mechanisms poorly expressed or silent. Compared with serovars of human origin, a variety of serotype and predominance of the sames pecies was observed.
A complexity and heterogeneity of the biochemical characteristics and profiles of antibiotic sensitivities more advanced than those of food-isolates. MLST technic seem to be little discriminating between the seven selected markers between strains of the same serotype. For its part, MLVA technique has confirmed high discriminating power between the Salmonella until intra-serotype level. Different clones were visualized (06) genotypes were obtained from (06) serotypes. The intra-serotype variability reflects the impact of environmental factors and the diversity of reservoirs (animal or human) and sources of contamination.

pea, sesame seeds and soybean.To study their proteins allergens, it was proceeded to:
- Extraction of vicilin of peanut, albumin and globulin of wheat, vicilin of lentil, albumin of green pea, albumin 2S, legumin and vicilin of sesame seeds, β conglycinin and glycinin of soybean.
- Determination of proteins rate, carbohydrates rate, the moisture content, the isoelectric pH and the temperature of denaturation.
- Comparison of the physico-chemical parameters.
- Search for relations between the various parameters.
It was shown that these proteins allergens are glycoproteins and possess pH isoelectric acid or near to the neutrality. They are thermoresistants and have a great water holding capacity. Their temperatures of denaturation depend on the quantity of proteins but do not depend on the quantity of carbohydrates. When the proteins rate is important, the carbohydrates rate is low, the pH isoelectric is acid and the temperature of denaturation is raised. In our first study, the burn healing effect of the aqueous extract of the cladodes (pads) of Opuncia ficus indica as well as the effect of the mixture of this extract with the fruit seeds powder, was evaluated on experimental burns in a rabbit model. The results obtained confirm the positive effect of the plant in the healing process, by significantly reducing the wound area through accelerating wound contraction, which lead to a shorter healing time compared to the control and the cicatryl® groups. Histological study showed that wounds treated with presented a thinning of the epidermis and a neovascularization of the granulation tissue with a good distribution of sudoriparous and sebaceous structures and a formation of a surface keratin layer favourable for good tissue
regeneration. Several wounds treated with the cladodes’ aqueous extract presented a normal restitution
of the initial aspect of the skin (ad integrum).
Our second study conducted on broiler chicken aimed to test the effect of the incorporation of the seeds of the fruit of Opuntia ficus indica in the birds’ feed as well as the addition of the aqueous extract of the cladodes in their drinking water. Products were aded using different concentrations 1%, 2% and 5%. The results obtained in terms of weight, feed conversion ratio and carcass yield are better in the experimental group (5%). Blood biochemical parameters were not modified by this incorporation, and remained in the physiological norms.
An increase in liver and kidneys weights of the birds supplemented with 5% fruit seed was observed but has no impact on the functioning of these two organs. In fact, the majority of the histological sections showed a conserved overall morphology of the liver and the kidneys, which testifies the safety of our plant.
Thus, at the end of this study, we can say that Opuntia ficus indica (Fruit seeds and cladodes aqueous extract), respectively incorporated in the feed and drinking water at 5%, improves both live and carcass performances of broilers, compared to 1% and 2% complementation. However, other studies should be undertaken in order to provide a better exploitation of this plant.

In our first study, the burn healing effect of the aqueous extract of the cladodes (pads) of Opuncia ficus indica as well as the effect of the mixture of this extract with the fruit seeds powder, was evaluated on experimental burns in a rabbit model. The results obtained confirm the positive effect of the plant in the healing process, by significantly reducing the wound area through accelerating wound contraction, which lead to a shorter healing time compared to the control and the cicatryl® groups. Histological study showed that wounds treated with presented a thinning of the epidermis and a neovascularization of the granulation tissue with a good distribution of sudoriparous and sebaceous structures and a formation of a surface keratin layer favourable for good tissue
regeneration. Several wounds treated with the cladodes’ aqueous extract presented a normal restitution
of the initial aspect of the skin (ad integrum).
Our second study conducted on broiler chicken aimed to test the effect of the incorporation of the seeds of the fruit of Opuntia ficus indica in the birds’ feed as well as the addition of the aqueous extract of the cladodes in their drinking water. Products were aded using different concentrations 1%, 2% and 5%. The results obtained in terms of weight, feed conversion ratio and carcass yield are better in the experimental group (5%). Blood biochemical parameters were not modified by this incorporation, and remained in the physiological norms.
An increase in liver and kidneys weights of the birds supplemented with 5% fruit seed was observed but has no impact on the functioning of these two organs. In fact, the majority of the histological sections showed a conserved overall morphology of the liver and the kidneys, which testifies the safety of our plant.
Thus, at the end of this study, we can say that Opuntia ficus indica (Fruit seeds and cladodes aqueous extract), respectively incorporated in the feed and drinking water at 5%, improves both live and carcass performances of broilers, compared to 1% and 2% complementation. However, other studies should be undertaken in order to provide a better exploitation of this plant.
