And the identification of different types of preparation and the criteria for assessing the quality of this product. On the other hand, see the economic and nutritional value of frik compared to durum wheat by comparing the yields and composition of durum wheat and grilled green wheat and determine the concentration frik per liter of sauce for soup best organoleptic qualities. The frik is consumed by all households (5 kg per year) as a soup called Chorba or Djari for a frequency of once a week in ordinary days and once a day in the month of Ramadan for the majority of households. The first criterion of frik quality is the color green of grain. The assessment criteria of the frik soup are the consistency and frik particles cooked. Comparison of yield and composition of durum wheat toast and green shows that there is a weight loss between 12 and 15% if the wheat harvest is milky and dough stage, this loss is offset by the cost of frik that is five times more expensive than semolina. For the chemical composition, the results show no significant difference between the two samples. Concentration in the soup frik affects other sensory qualities.

The results of physico-chemical characteristics (acidity and density) are close to the standards, only the fat content is low, with an average of 30.9 g / l, it depends mainly on the dietary factor. Microbiological analysis is focused on 9 microbial groups: among the groups hygiene indicators (total bacteria, psychrotrophic, thermoduric, coliform and Escherichia coli) and
some groups potentially pathogens (Staphylococcus aureus, Salmonella). Contamination levels were interpreted on the basis of microbiological criteria set by the ministerial decree of 24 January 1998. Enumeration of total aerobic mesophilic flora, psychrotrophic and thermoduric of serves to underscore the severe contamination of the samples analyzed with respective averages of 28,8.106 CFU / ml, 12,3.105 CFU / ml and 44,2.104 CFU/ml. Milk samples are contaminated with total coliforms, fecal coliforms and fecal streptococci with average respective 50,3.105 CFU / ml, 36,7.104 CFU / ml and 55,4.105 CFU/ml. The germ E. coli is present in 64% of milk analyzed. The presence of pathogens is mainly attributed to staphylococci with an average of 37,5.102 CFU /ml, 80% of isolates were coagulase positive. The study of their susceptibility patterns to antibiotics showed a frequency of resistance (100%) vis-à-vis penicillin G, very little resistance vis-à-vis the oxaciline (8%) of tetracycline (17%) and trimethoprim + sulfamethoxazole association (17%). No resistance was observed for cefoxitin, erythromycin, enrofloxacin, and vancomycin. Moreover, we note the absence of Salmonella in all samples. In view of the Algerian standards (JORA, 1998), the hygienic quality of all milk samples analyzed, is bad. Milks are heavily polluted, revealing questionable hygiene practices, that even the best cooling conditions of milk, can not, under any circumstances, hide. These results can only strengthen the conviction of the
urgent need for technical support in this area, coupled with the revision of payment of milk: the inclusion criteria daily as basic as the milk fat and protein and contamination by microorganisms. There will surely sustainability in Algeria of a dairy industry that is capable of distinguishing the various versions of a product as variable and perishable as milk.Note de contenu : Annexes. Biologie Résumé : This study is part of the context of a multidisciplinary research on terrestrial and aquatic ecosystems. To assess the quality of water of the Rhumelwadi, its tributaries and the water dams HammamGrouzand BeniHaroun, to the organic pollution and possible metal contamination, we conducted for water and sediment compartments a set of physico-chemical approaches: physical and chemical parameters, major mineral elements, pollution parameters and dosage of five ETM (Cd, Cr, Cu, Pb and Zn). This research involved five sampling points for the water compartment, both located at the two dams GrouzHammam and BeniHaroun,
and three on the Rhumelwadi, collected twelve times during 2009. For the sediment compartment, sixteen sampling points were selected in strategic locations and sampled twice during the month of January 2010 and April 2010. The set of parameters determined showed organic pollution characterized by fair to poor quality water from the wadiRhumel. Metallic contamination evaluated by SEM is almost negligible dissolved in water but fairly abundant in sediments which could cause high toxicity for aquatic fauna and flora, mainly marked by
levels of Cd, Cr, Zn and Pb higher than the estimated natural levels. The waters of dams HammamGrouzandBeniHaroun are exposed to pollution from various sources (urban,industrial and agricultural ...) despite treatment of wastewater in STEP. Their sediments show a significant metal contamination. A similar situation is observed for the waters of
Rhumelwadi and its tributaries, where the degree of pollution is important.
To remedy this problem, it would be important to better exploit the wastewater treatment plants, a wastewater collection and mastered most comprehensive, well while managing industrial and municipal discharges, which undoubtedly constitute a major threat to ecosystems aquatic. The purified water supply Rhumelwadi, its tributaries and therefore the
two dams HammamGrouzandBeniHaroun. They contribute to the reduced risk of organic pollution and heavy metal contamination of water and sediment compartments, and water conservation for serene life (better water management).
