For this purpose, several morphological, organoleptic, physicochemical and aromatic analysis have been carried out using solid phase microextraction (SPME) and gas chromatography combined with mass spectrometry (GCMS). Morphological characterization of these varieties reveals their acceptable quality; they have a weight ranging from 6.63 to 15.98 g, a length of 3.33 to 4.36 cm, a diameter of 1.83 to 2.73 cm and a weight ratio (pulp / fruit) between 85.97 and 93.61%. In addition, the organoleptic characterization shows that these dates have a flavoured taste. Moreover, these varieties show excellent physicochemical quality; they have a total sugar content 59.68 - 76.29%, a pH between 6.57 - 7.17, a acidity 0.16 - 0.24%, an ash content 1,77 - 3.15%, a total lipid content 0.012 - 0.1% MF and a water content of 17.66 to 38.66%. On the other hand, the analysis of volatile fraction of the studied varieties showed their aroma composition, 61 volatile compounds were identified which can be categorized into eight classes according to their functional groups: 14 alcohols, 15 esters, 12 aldehydes, 3 terpenoids, 4 ketones, 8 saturated hydrocarbons, 3 unsaturated hydrocarbons and 2 ethers. 48 new compounds were identified which can distinguish the Algerian date from the other dates studied. Our work consists of studying the behavioral determinants of appetite and the involvement of the bile acid receptor TGR5 in the modulation of food preferences and its association with obesity. A survey on eating behavior and assessment of subjective and objective appetite was conducted among 208 young adults. Subjective feelings of appetite were estimated by scores on a visual analog scale and objective appetite was estimated by nutrient intake and interprandial intervals. The identification of a signaling pathway via the TGR5 receptor in lipid-glucidic homeostasis and its implication in the modulation of dietary preferences and in obesity was carried out in WT and TGR5-/- mice. The association of the TGR5 gene polymorphism with obesity has been investigated in 127 children. Food consumption depends on the subjective sensations of appetite, and the preprandial duration. Stress induces overconsumption of energy. Consumption habits and the importance given to meals favored more energy consumption. The subjective satiation score is associated with nutritional intake. The gustatory pleasure score is correlated with protein and lipid intake. Gastric fullness is correlated with fiber intake. The energy density of dishes has a positive influence on satiation and negatively on gastric fullness. Only the sensation of gustatory pleasure is influenced by the pleasantness of the dish served. Postprandial duration is positively correlated with subjective satiation score and gustatory pleasure, but not with gastric fullness.The proteins had presented a satiating effect and a satietogenic power more important, than those of the carbohydrates and the lipids. The deletion of the TGR5 gene associated with a high fat diet, leads to a decrease in energy expenditure, and an imbalance of carbohydrate-lipid and energy homeostasis, as well as a decrease in the secretion of GLP-1. To which are added inflammatory effects and hepatic steatosis. Indeed, TGR5 is also involved in the control of dietary fat intake through its involvement in the physiology of taste buds. The study of the single nucleotide polymorphism of TGR5 (SNP rs11554825) further confirms its involvement in childhood obesity.

The study involved 2000 healthy children, aged from 1 to 24 months, randomly selected. For each subject we collected, by questionnaire, information on the characteristics of the child, the mother and the household. Dietary practices including breastfeeding type, age and food diversification foods were sought. Children's dietary intake of energy, macronutrients was estimated by the 24-hour recall. The assessment of nutritional status was performed by calculating anthropometric indices. For the classification of children we have retained the pediatric references of WHO (2006).
The results reveal the simultaneous presence of malnutrition and overweight. Malnutrition is found in 17.55% of children. It is more common in children from 1 to 6 months with 79.48%. Its rate decreases with the age of the children (r = - 0.317, p = 0.027).
Overweight affects 29.65% of the total population. Overweight alone affects 17.95% of children and obesity 11.7% of them. Its rate increases with the age of the children (r = 0.012, p = 0.003). It is more common in children aged 12 to 24 months with 76.21%. The study of the determinants of children's nutritional status shows a significant link between malnutrition and some parental risk factors, including early motherhood, maternal malnutrition and inadequate GWG. With respect to individual risk factors, malnutrition appears to be significantly associated with prematurity and low birth weight. In addition, we noted a significant link with the occurrence of anemia and acute diarrhea. Social factors contribute to child malnutrition, through the low social level, and the low level of education of mothers. For dietary factors, malnutrition appears to be significantly associated with breastfeeding, especially for children with low birth weights. It should also be noted that malnourished children have average daily energy and protein intake, which is significantly lower compared to children of normal nutritional status.
For overweight and childhood obesity, maternal overweight, excessive GWG, and maternal diabetes are the main risk factors for parenting. Among the individual determinants, a significant link was observed with the female sex. High birth weight, such as low birth weight, are also risk factors. Regarding socio-economic factors, overweight is significantly more common in households with high social and educational levels. This link is stronger, as the size of households and the number of children decreas. Artificial breastfeeding and the early age of
introduction of weaning foods are the main dietary risk factors. It should also be noted that overweight children consume more sugary drinks, less dairy products and have average daily energy, carbohydrate and fat intake, significantly higher than normal weight children.
Malnutrition has long been a priority concern in Algeria, as in most developing countries. At present, the nutrition transition process has changed this situation, with a double burden of underweight and overweight. Overweight and obesity have become a public health problem that threatens children in Algeria.
