The results of physico-chemical characteristics (acidity and density) are close to the standards, only the fat content is low, with an average of 30.9 g / l, it depends mainly on the dietary factor. Microbiological analysis is focused on 9 microbial groups: among the groups hygiene indicators (total bacteria, psychrotrophic, thermoduric, coliform and Escherichia coli) and
some groups potentially pathogens (Staphylococcus aureus, Salmonella). Contamination levels were interpreted on the basis of microbiological criteria set by the ministerial decree of 24 January 1998. Enumeration of total aerobic mesophilic flora, psychrotrophic and thermoduric of serves to underscore the severe contamination of the samples analyzed with respective averages of 28,8.106 CFU / ml, 12,3.105 CFU / ml and 44,2.104 CFU/ml. Milk samples are contaminated with total coliforms, fecal coliforms and fecal streptococci with average respective 50,3.105 CFU / ml, 36,7.104 CFU / ml and 55,4.105 CFU/ml. The germ E. coli is present in 64% of milk analyzed. The presence of pathogens is mainly attributed to staphylococci with an average of 37,5.102 CFU /ml, 80% of isolates were coagulase positive. The study of their susceptibility patterns to antibiotics showed a frequency of resistance (100%) vis-à-vis penicillin G, very little resistance vis-à-vis the oxaciline (8%) of tetracycline (17%) and trimethoprim + sulfamethoxazole association (17%). No resistance was observed for cefoxitin, erythromycin, enrofloxacin, and vancomycin. Moreover, we note the absence of Salmonella in all samples. In view of the Algerian standards (JORA, 1998), the hygienic quality of all milk samples analyzed, is bad. Milks are heavily polluted, revealing questionable hygiene practices, that even the best cooling conditions of milk, can not, under any circumstances, hide. These results can only strengthen the conviction of the
urgent need for technical support in this area, coupled with the revision of payment of milk: the inclusion criteria daily as basic as the milk fat and protein and contamination by microorganisms. There will surely sustainability in Algeria of a dairy industry that is capable of distinguishing the various versions of a product as variable and perishable as milk.Note de contenu : Annexes. For this purpose, 90 milk samples were analyzed at the laboratory of the physicochemical analysis of the ITELV-Baba Ali and at the laboratory of Parasitology-Mycology of the high national veterinary school of Algiers. The rate of the fat contents and proteins are high in the ewes. There is a small difference between the local cows and the ewes and they are very different at the imported bovine races. In the mastitis milk of the same species or of the same animal race, differences in the content of proteins were noted according to mushroom in question. A significant difference was noted for Candida tropicalis in the local cow and highly significant for all the fungic species in the black Magpie. In the goal to appreciate faculties to the transformation produces some derivative of the mixture (cool milk / recombinated milk) used in our country as palliative to the deficit of the production in raw milk, we achieved tests of cheese manufacture to dough soft Camembert type in the Dairy of Draa Ben Khedda while especially interesting us to the assessment of proteolytic activity taking place during the phase of refinement and the storage refrigerated of this cheese. This activity is measured by the free amino grouping dosage (method using a specific reactif: the TNBS) and by the follow-up of casein behaviour electrophoretic in Page - Urea. The impact of the pasteurization treatment (85°C during 20 dry) on the milk of departure and the nature of this last have been examined also. The achieved analyses showed that the mixed milk (mixture to equal parts between
the cool milk and milk recombiné) permits, while correcting the rate weak proteic of the raw milk collected locally, to improve its value nutritional and its technological faculties. Nevertheless, electrophoretic pattern’s of seriqueses proteins in Page - Native as well as the soluble protein dosage after the treatment of pasteurization revealed a strong induced denaturation rate by this last and valued to about 30% in the case of milk recombiné used only. Concerning tea appreciation of tea refinement phase, however tea assessment of proteolytic activity is combinated to tea development of microorganisms, so much at tea level of tea superficial crust that in depth of tea derivative product tea gotten results showed that for tea two types of cheese considered (milk-based expenses solely however of tea mixed milk), tea proteolysis is pronounced more in surface that inside tea Camembert and this some either tea length of refinement considered. This activity, that is major after the sixth day of refinement, incomplete home after 12 days (time of maturation exercised to the unit. The extension of the refinement length at 15 and 210 days put besides in relief this insufficiency. Besides, the refrigerated storage doesn't seem to be a way appropriated for the characteristic organoleptiques expression searched for of the Camembert.Note de contenu :

الحيوية الكيمياء الدموية الحليب الجزائرIndex. décimale : 636 Sciences Vétérinaires Résumé : The present study carried out in the region of El Eulma (North-eastern Algeria) showed a highest prevalence (81.9%) of theileriosis (Theileria. annulata infection) among the piroplasmosis, the coinfection between theileriosis and babesiosis (B. bovis) are frequent (14.9%). The number of the highest cases (45) has parasitemia between 0.1 - 4.99%. A total of 180 and 134 blood samples from 21 farms were collected in April and November 2015 (before and after the tropical theileriosis season; respectively) in the region of El Eulma (Sétif). Molecular prevalence (38.9 and 50% in April and November; respectively) was higher than those by Giemsa stained blood smear (17 and 16.4%, before and after tropical theileriosis season; respectively) (p<0.001 ). Exotic breeds were more infected than local breeds in the first visit (p=0.003), while during the second visit no significant difference was detected (p=0.226). This prevalence is lower in cattle less than one year (p=0,117; 0,270 in April and November; respectively). Molecular prevalence was significantly higher in females (44.7%) than in males (22.9%) (p<0.008) during the first visit.
No influence of type of livestock or the walls statements was detected. The sequences of genes Algerian Tams1 (96.1 to 98.9%, identity values) have a relationship with the Mauritanian, Tunisian and Egyptian sequences.
The biochemical and haematological study conducted on 40 healthy cattle and 40 clinically infected showed that the number of leukocytes, erythrocytes, haemoglobin, haematocrit, glucose, albumin, and total protein decrease significantly (p=0.005; 0.008, 0.03,0.048, 0.002, 0.027 and 0.018; respectively) in clinically infected Montbeliard breed with Theileria annulata. All infected animals have a total and direct bilirubin concentration increase significantly (p<0.001). The erythrocytes, haemoglobin, and haematocrit crossbreed cattle concentration decrease significantly (p=0.027; 0.003 and <0.001; respectively). Two types of anaemia were detected: hypochromic microcytic anaemia in Montbeliard clinically infected cattle and normochromic normocytic anaemia in infected local and cross breed cattle.
The tropical theileriosis impact study in Skikda region (northern Algeria) showed a decrease in milk production in 10 local breed cattle infected with Theileria annulata in summer 2015. The decrease in weekly milk production estimated for two months was 2.76 L /day / cow corresponding to 31.92% of the total milk production. This decrease corresponds to 110.5 AD (US $ 1.02) / day / sick cow. The relative variation of milk production showed a dramatic decrease from 82.72 to 0.76% on day 21.

The identification and action of actors involved in agricultural upstream and industrial downstream are central to this research. In the wilaya of Guelma, agri-food industries have developed rapidly and their activities cover a large part of its territory. These sectors have experienced a development in terms of areas, production and yields. From now on they contribute to the formation of an original agro industrial center with the appearance of industrialists putting into practice innovative techniques and elaborate forms of management. Our empirical application in the wilaya of Guelma has shown that each sector has its own characteristics and that it is totally different from the other sectors, whether in its agricultural upstream or in its industrial downstream.
