Index. décimale : 540 Chimie et sciences connexes Résumé :
This report is concerning the phytochemical study of two Algerian plants belonging to the Fabaceae family (Genista ulicina Spach) and Asteraceae family (Chrysanthemum macrocarpum Coss. & Kralik ex Batt). This study led to the isolation and identification of 36 compounds from which 10 compounds are new.
The structures of isolated compounds were established particularly by the use of NMR highfield
1D and 2D technics (1H, 13C J-modulated, COSY H-H, HSQC J-modulated, HMBC and NOESY), high resolution mass spectrometry (ESI-MS and HR-ESI-MS), measurement of rotatory power and comparison with literature data.
GC and GC / MS analyses of the essential oil of C. macrocarpum showed that it was mainly represented by: T-cadinol (19.6%), spathulenol (12.5%), caryophyllene oxide (6.5%), and α- cadinol (5.6%).
The chloroform fraction of C. macrocarpum showed a weak antibacterial activity against: E.
coli, S. aureus, P.aeruginosa, E. faecalis and K. pneumoniae.
The same chloroform fraction was evaluated for its antiproliferative activity against human cancer HT-29 cells and human PC3 cells. The results indicate that the chloroform fraction inhibited cell proliferation of both HT-29 and PC-3 cells,The chloroform fraction showed an excellent analegesic, anti-inflammatory and antiulcerogenic activities.
The butanolic fraction of G. ulicina and isolated compounds were investigated for their antibacterial and antiproliferative growth inhibition, but no significant activities were observed.
This study was conducted in order to enhance the lemon peel (Citrus limon) by using their essential oil as a natural agent for preservation and aromatization in cream in order to diversify the types of
existing cream on the market.
This essential oil was extracted by hydroditillation, extraction yield was 0,89 ± 0,09%. The antioxidant activity of the extracted essential oil was studied by the DPPH° test, this free radical has been effectively reduced, compared to vitamin E. These results were confirmed by the test of β- carotene bleaching.
The study of antimicrobial activity of essential oil of C. limon showed that two tested bacteria are resistant against the effectiveness of the oil, resulting in very high MICs (4% and > 8%). Regarding yeast strains isolated and tested Debaryomyces sp. and Rhodotorula sp., they have some sensitivity
to the effect of essential oil, characterized by CMI respectively 0,25% and 0,5%. The other two strains Zygosaccharomyces sp1 and Zygosaccharomyces sp2, were resistant, their MICs are respectively in the order of 1% and > 4%.
The various tests on the formulation of the added essential oil of C. limon creams were tested by developing three fresh creams with concentrations of 0,125%, 0,25%, 0,5%. Characteristics are conforms to standard. The results of physicochemical and microbiological analyzes prepared fresh cream after opening the package, show that the presence of the essential oil at low concentrations does not limit microbial spoilage. The evaluation of the oxidative stability by Schaal test indicates that the fresh cream with essential oil of C. limon are more resistant than the control opposite the forced oxidation.
Sensory analysis show that the incorporation of essential oil in the cream, at concentrations of 0,125% and 0,25%, involves no significant difference (p > 0,05) in terms of flavoring, and make products which are classified in same order than the control. Only the rate of incorporation of the essential oil of 0,5% significantly downgraded the product compared to the control in the third row, which has led to changes in smell and flavor while the texture, color and taste are unchanged. The principal component analysis (PCA) showed a negative correlation (r = - 0,998) between the levels of incorporation of the essential oil and the aroma of raw milk, and a positive correlation (r = 0,956) with the color yellow. - 104 f. ; 30 cm.

Langues : Français (fre) Tags : Pituranthos chloranthus shortening oxydation antioxydants huile essentielle Essential oil ??????? ?????? ??????? ????? ??????? Index. décimale : 640 Industrie Alimentaire Résumé : Through the present study on the assessment of the antioxidant activity of Pituranthos chloranthus’ essential oil, endemic plant of the Algerian Sahara high plateau and its incorporation in a shortening formulation produced in at a laboratory scale in a margarinery of CEVITAL Food Company, it is revealed that:
Aerial part of Pituranthos chloranthus showed a moisture of (11,8 ± 0,097) % and an essential oil’s extraction yield, extracted by hydrodistillation, is near (0,86 ± 0,09) % and an optimization of time (t = 250min) for a dry plant mass of de (m = 80 g).
Antioxidant activity of the present plant material, determined by three tests: reducing power,DPPH and
-carotene bleaching test against a standard (α-Tocopherol or Vitamine E). The reducing power is of (0.094 ± 0.018) g TE/g EO, IC50 of (0,024 ± 0,002) mg/ml and a protective effect against
-carotene oxidation.
Physico-chemical characteristics of the shortening produced including: acidity, peroxide index and melting point are in a good agreement with the internal company standards.
Assessment of oxidative stability is carried out by Rancimat and Schaal tests. Rancimat showed that shortening incorporated with 75ppm gave the best resistance to oxidation. This is also consistent with Shaal test, with a peroxide index of PI = 0, 28 meq g O2/1000g, carried out in 35 days.
Thus, Pituranthos chloranthus essential oil may be of a technological interest to serve like preservatives in fats and oils, especially in food companies.

Chromatographic separations and purifications of extracts from the aerial parts and roots of Mentha aquatica led to the isolation and identification of 1 6 compounds, including one new triterpene and 5 triterpene acids which are new for the genus.
The structures of isolated compounds were particularly established by the use of NMR 1D and 2D (1H, 13C, COSY H-H, HMQC and HMBC), high resolution mass spectrometry (ESI-MS and HR-ESI-MS) and by comparison with literature data.
GC and GC/MS analyses of T. dreatensis essential oil showed that it was mainly represented by thymol (28.1%) followed by γ-terpinene (18.7%), thymyl methyl ether (10.9%) and linalool (5.0%). This oil showed a good antioxidant activity by the bleaching of β-carotene.
5 methods were used to evaluate the antioxidant activity of Mentha aquatica and Stachys guyoniana. The latter showed a good activity with 4 methods: β-carotene, DPPH, ABTS and metal chelating whereas Mentha aquatica exhibited a moderate activity with CUPRAC and ABTS tests. Compared with the other tested extracts, the n-butanol extract of
Stachys guyoniana showed the highest anticholinesterase activity.
The two plants showed an antibacterial potential against some bacterial strains, by the use of agar diffusion method and MIC's determination.
